Known throughout the Rockies for his cuisine at the legendary Post Hotel and exclusive Fairmont properties, Chef Bourdages brings a passion for seasonal, foraged ingredients, real partnerships with Alberta farmers and growers, and modern Canadian cuisine rooted in a strong sense of place.

Refreshed menus across all three dining venues reflect this vision.
At Rustica, guests will find new, chef-inspired dishes such as Radish & Crab Ravioli, Black Cod with maitake mushrooms, and handmade pasta featuring Canadian sheep pecorino.
At Stoney’s Grill, elevated comfort food takes centre stage with Bow Valley favourites including the Silvertip Beef Burger, Silvertip Poutine and what many are already calling the best beef dip in the region.
Meanwhile, The Market at Silvertip is delighting visitors with specialty coffee, pastries and handmade Italian-style pizza.
